Cookie Dough Caramel Cups

These little bites are so decadent and so delicious, it’s almost impossible to believe they are both vegan and have no bad bits in them.
I found the original recipe on my search for yummy, healthy treats for Clayton and I’s snacks for the week, and I was not disappointed.

Ingredients: 

-4 tablespoons of almond butter
-2 tablespoons of peanut butter
-1 tablespoon of rice malt syrup (or honey)
-3 tablespoons of maple syrup
-4 tablespoons of coconut oil
-1tsp of vanilla extract
-pinch of salt
-50 grams of dark chocolate, chopped

Method:
1. Prepare either a mini silicon muffin pan, or if, like me, you don’t own one, just put small patty pans in a 12 hole muffin pan.
In a small saucepan on a low heat, mix together all the ingredients except the chocolate.
2. Once melted together and smooth, take off of heat and let cool. I find things cool quicker if I pour them into a cool bowl.
3. Once the mixture has cooled mostly, stir in the chocolate and pour into prepared pan.
4. Let cool, and keep in refrigerator until ready to eat.
